Lately, I’ve been putting an emphasis on my health and fitness. As much as I love cheese smothered plates of pasta, creamy charcuterie boards, fork-tender braised ribs, and a great night of nachos and wine, it’s important to live a balanced lifestyle.
This recipe is incredibly healthy, easy, and delicious! It’s low calorie, high in protein, and only takes 10 minutes from start to finish! Seriously.
Cod Piccata is perfect for a busy weeknight. Traditionally the cod is dredged in almond flour. Piccatta also usually includes butter. For this recipe, I gave it a quick toss in corn starch and swapped out the butter for a little olive oil in an effort to save on calories. After 5-6 minutes in the pan, the cod has a great sear and tender, juicy meat!
Recipe for Healthy Cod Picatta:
- 2 Cod Filets
- 1 Lemon (Juice)
- 1/4 Cup Fish Stock
- 1 Tablespoon of Capers
- 1.5 Tablespoon of Corn Starch
- Freshly Cracked Peppercorn
- 1 Teaspoon of Olive Oil
- Kosher Salt
- Coarsely Chopped Parsley
Instructions for Healthy Cod Picatta:
1: Pat your cod dry with paper towel, and season generously with fresh cracked peppercorn and kosher salt.
2: Sprinkle corn starch on a plate. Dredge your cod through the corn starch.
3: Drizzle olive oil into a frying pan over medium-high heat. Place your cod down into the oil and sear for 2-3 minutes per side.
4: Remove cod from pan. Add lemon juice, capers, and fish stock to the pan. Scrape colour from the seared cod off of the pan. Allow it to simmer until it has reduced by 1 half. Pour the sauce over the cod.
